Wisconsin Deer camp

Up to deer camp for the weekend, nice to see all the guys and get away for a weekend. I am not hunting I manage logistics. Make lunches and dinner. Tonight's dinner venison faghitas and venison gyros. Curious to what gun hunters are seeing? This morning 10 hunters shot 0 saw no bucks it is in the 30's, I am thinking the afternoon sit will be active. What are the other gun hunters seeing?

 

How do you make venison gyros?

 

I do two 1.5 pound venison packs and 2 1 pound ground pork. I combine the two and season with granulated garlic and Cavender's all pourpose greek seasoning (most grocery stores have it) Mix it up and let the meat rest for a couple hours in the fridge. Take it out and put the meat in a cake pan and you have to pound and mix and smash and pound and kneed the meat like bread dough for 5 minutes. Put it in a cake pan and even it out bake at 350 for 45 minutes, drain off any fat and slice the loaf, it will be the same texture of gyro meat.

 

Is that ground venison?

If you like gyros you will love this. I get the flatbread and sauce from Minni's diner in Rogers, the sauce makes the gyro
