Late season I love hunting middle of the day...colder it is the later the movement at our one property. Have harvested does in the middle 5 hours of light a lot over the years.

In the afternoon I like to get out of the stand half hour after the sun sets.

I generally don't hunt mornings in the late season unless I know I am hunting only a few days and I am away from home to hunt with a limited time frame.
I let the weather dictate the time I start my afternoon sit. If it's average temp for that time of year and the location I would plan on about two hours before sunset....if the temps are well below avg I will get on stand even earlier.

I found mature bucks tend to leave feeding areas before shooting light in the morning. This makes Setting up near their bedding area very difficult. The pressure you put on them near their bedding can throw them off their afternoon feeing patterns. I don't it's worth the risk.

It all depends on the weather and where you are hunting.

Late season is one of the better times to find a MATURE deer on his feet looking for that last receptive doe. All day sits are still preferred. Generally, the does are going to be hitting the food sources late in the season, especially if it is cold. Get out at roughly 1PM and sit until 30 minutes after dark.
