When I lived in West Virginia I made deep fried beaver balls, they were awesome! No they weren't what you are thinking. They were just the back straps cut into chunks, dipped into a batter and deep fried. One if the best things I've ever had. I like Opossum and coon too!
I read and article about eating the nervous system of animals specifically brains. The article mentioned squirrel brains. I went into work and told the guy's what I read and asked who would eat the brains of squirrel??? One of the guy's said him and his sister used to fight over the head of the squirrel it was their favorite part.

I have eaten deer, buffalo, antelope, rattlesnake, gator, whale muk tuk, turtle, duck, goose, wild turkey, and other game birds. I have heard zebra and horse are very good. Haven't had the chance to try either.

One local neighbor has a Goat Roast every year. It's actually pretty dang good. The local bar used to have a Beaver Blast every year where they cook up a bunch of beavers that they trapped. We were in line to get some and the one old dude thats dishing it out says to the chick in front of me " How would you like your beaver? Shaved or just sliced thin?" haha.

    Nothing crazy.

Groundhog (my grandma loved those nasty things so I used to shoot a couple a year for her when she was alive), rattlesnake, alligator..then just all the normal game; squirrel, whitetail & mule deer, elk, bear, moose, etc., etc.

I've eaten farm-raised elk. It is very, very good. It is very lean, so you have to go slow and low when you are cooking it on the grill.
