We were talking about this at dinner tonight. So what is your favorite vegetable?

I thought this would be easy to answer until we started talking about this. Fresh corn on the cob is hard to beat and so is fresh asparagus. But I eat salsa almost every day and would have a hard time not picking tomatoes (I don't want to hear they are a fruit :))

I could live without most any of them if I had to but I have a hard time saying that about taters.

    Squash and Zuchini...

Peppers (all from bell peppers to the hottest peppers found), Carrots, broccoli, cauliflower, asparagus, okra, green beans, corn, onions, and mushrooms all come in a close second.

I switched over to an all meat/veggies diet for dinner a few months back and now could not live with out any of the listed veggies.
