I know the superbowl has come and gone, but I tried out this recipe for baked wings last night and they were absolutely delicious. I used two chili peppers for a little extra spice, and I also made two servings of the marinade to make sure that I had plenty for the cooking process. INGREDIENTS 3 pounds chicken wings, drumettes and wing joints 1 Tablespoon butter Marinade: 1/3 cup soy sauce 1 teaspoon Worcestershire sauce 1/4 cup honey 1 Tablespoon sherry 1 Tablespoon Dijon mustard 1 teaspoon dry mustard 1 Tablespoon chopped fresh rosemary 3 pressed cloves garlic 1 fresh red chili, thinly sliced 1 teaspoon black pepper 1/2 teaspoon salt PREPARATION: Whisk together all marinade ingredients. Place wing pieces in a large Ziploc bag with the ingredients, seal the bag and turn to coat the chicken well. Marinate in the refrigerator overnight (can be marinated two days ahead). Preheat oven to 375°. Line a half sheet pan with heavy duty foil and spray lightly or brush with oil. Remove chicken from the marinade, reserving the marinade in a small saucepan. Lay the chicken pieces skin-side down on the prepared pan and roast 30 minutes. Baste with some of the reserved marinade and turn the pieces. Brush again with the marinade and roast another 30 minutes or longer until deeply bronzed. When the wings are almost finished bring the reserved marinade to a boil, lower heat to simmer and reduce the marinade until almost a syrup (don’t allow to become a syrup -- will be bitter). Remove from heat and whisk in the tablespoon of butter. Place wings in a large bowl, pour in contents of the saucepan and turn to glaze evenly. Plate and serve.
So I had the best Beer Bread ever last night at a Super Bowl party. The town Beer Junkie made it with Guiness and Chocolate Chips. All I can say is that it was the best damn beer bread ever!!!
Here is one I made for the first time yesterday. Ingredients: 3 tubes of crescent roll dough 4 ounces Parmesan grated cheese 24 ounces roasted red peppers 8 eggs 1/2 lb. pepperoni(or salami) 1/2 lb. ham 1/2 lb. provolone cheese (sliced) Preparation: Spray baking dish with Pam 1 1/2 tubes of dough spread out on bottom of dish 1st layer- spread out half of ham, pepperoni, provolone cheese, roasted peppers * Beat eggs in a bowl and add Parmesan cheese* 2nd layer- pour half of egg mixture over 1st layer 3rd layer- spread out rest of ham, pepperoni, provolone cheese, roasted peppers 4th layer- pour other half of egg mixture over 3rd layer top layer- use other 1 1/2 package of dough and place on top. Lightly brush whats left of egg mixture and sprinkle with parmesan grated cheese. Cut some 1/2 slices in top crust so moisture can escape. Cooking: Bake at 375 degrees covered with foil for 30 minutes. Uncover and bake for another 30 minutes. One of the best dishes I've ever had. You're welcome.
This one is really good and simple too. *boil boneless skinless chicken breast. When done tear apart (shred). Marinate in bowl with hot sauce for 20-30 minutes. 8 ounces cream cheese on bottom of pan (I use a little more) Sprinkle hot sauce over cream cheese shredded Mozzarella over cream cheese spread chicken over cream cheese and mozzarella 4 ounces of crumbled blue cheese over everything. Bake at 350 degrees for 15 minutes. Ritz crackers or tortilla chips.
