I've had parties where 4-5 guys show up with crockpots of something similar...it all gets eatin...big fan here. And similar to what I was going to post...I call them mini taco-boats. Usually prepare 2 cookie sheets ahead of time and just pop in oven once guests are ready: -Scoops Tortilla chips lined up on sheets -1 can chili w/meat + 1 can refried beans, heat in pan to mix and easier to spoon into chips -spoon into Scoops chips -pinch of shredded cheese on each Scoop -Topped by finely diced green onion stems Pop in oven until cheese melted, serve immediately.

Wings are best made in the oven. Fried are greasy and messy. Really, the best wings are made in the oven. I have a great recipe that uses Crystal Hot Suace and Seasame Oil, Kosher salt and the such. They turn out tender and tasty. No way should a wing be fried and sauce added later.
guacamole Ingredients: • 2 ripe seasonal avocados • 1/2 small onion, minced • 1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt(I use 2 cloves) • 4 teaspoons fresh lime juice, or to taste • 1/2 teaspoon ground cumin • 1 fresh or pickled jalapeno chile, if desired, seeded and minced (wear rubber gloves) I say the Jalapeno is a must • 3 tablespoons chopped fresh cilantro, if desired Directions: • Halve and pit the avocados and scoop the flesh into a bowl. • Mash the avocados coarsely with a fork and stir in the onion, garlic paste, lime juice, cumin, chile, and cilantro. • The guacamole may be made 2 hours in advance, its surface covered with plastic wrap, and chilled. Oven Chicken Wings Preheat oven to 425 degrees Douse wings with sesame Oil Douse them again with Crystal Hot sauce Sprinkle with Kosher Salt Do it on both sides Place on heavy cooking sheet and cook for 15 or 20 minutes. I have a really heavy OLD cast aluminum tray I use. I line it with aluminum foil to help with clean up and to keep the wings from sticking Douse again with Sesame oil and Hot sauce Turn and cook for at least another 15-20 minutes. In this process fat run off will become a problem. I pour some of it off to keep the wings from becoming greasy. I play it buy ear and feel really. I may put hot sauce on another time or two. I usually turn the wings at least 3 or 4 times and douse each time with hot sauce. I don’t… but if you like them crispy… broil the last 4 or 5 minutes. Depending on the size of the wings they’re usually done in less than an hour. Stick them with a fork. When they’re done… the fork goes right through them with little effort Server with Kens Chunky Blue Cheese dressing
This recipe will KNOCK your socks off...... Stacked Chicken Enchiladas 1 1/2 lbs Chicken Breast 2 jars (16 ounces each) Roasted green salsa (salsa Verde) 8 ounces sour cream 8 oz of cream cheese 2 large onions, chopped (2 cups) 1 medium yellow and I medium red bell pepper, chopped (2 cups) 6 cloves garlic, finely chopped 4 cups shredded Monterey Jack cheese 12 flour tortillas (10" diameter) 2 Tbs Olive Oil 1. Heat oven to 400° F. Spray square baking dish, 16 X 11 X 2" with cooking spray. Remove fat from pork. Cut chicken into 3/4" cubes. 2. Mix salsa and sour cream; set aside. Spray 10" nonstick skillet with cooking spray; heat over medium-high heat. Cook pork, Onion, bell pepper and garlic in skillet about 6 minutes, stirring occasionally until pork is no longer pink. 3. Stir most of the salsa mixture into chicken mixture, reserving enough to cover top of dish.. Cook uncovered over medium heat until boiling, stirring frequently; remove from heat. Stir in 2 c. of the cheese. 4. pour olive oil in baking dish and take tortilla shell and coat dish with oil. Place tortilla in baking dish, covering the bottom and sides. Top with 1/3 of the chicken mixture. Repeat layers twice more. Top with remaining tortilla. Spoon remaining salsa mixture on top; sprinkle with remaining cheese. Cover loosely with aluminum foil and bake about 10 minutes or until heated through. Take foil off and put back in oven to brown top.

LOL! I just ate this for dinner!! I must say to add to the thread, Chicken Wings Dip. I have actually had this for dinner, although I do not recommend it! Here is the recipe so PT doesn't holler at me: 16 Ozs cream cheese 8 ozs Frank's Red Hot Sauce (or equivalent) 2 cups cooked shredded chicken 1cup shredded cheddar cheese Combine cream cheese and hot sauce. Heat in the microwave until cream cheese is melted. Stir, add chicken and cheddar cheese. Mix together. Put in a baking dish. Top with more cheddar cheese, if desired. Bake at 350 F for 30 minutes. Bacon wrapped lil smokies slice bacon in half, wrap around little smokies and stick with a toothpick. Put in large bowl and sprinkle brown sugar over the top. I use probably a cup and half of sugar. Make sure you mix up the sugar and smokies well. Let sit over night so the sugar makes a syrup and pop in the oven at 400 degrees until bacon is brown and crisp. There won't be any left I guarantee!
1 once of another channel. 2 scoops of turn the game off. Something better to do, to taste. Leave the house for about 3 hours, or, until game is over. Serve, and enjoy. Haha. Obviously, I'm not a fan !! Supercross is on, tonight; this is what any guests in my house will be watching
