A lot of it gets ground up for burgers, chili, tacos, etc.. backstraps get eaten the night of the kill usually. Not a big fan of roasts.. My cousin has a butcher table, grinder, and walk-in deer cooler, so Im lucky I guess. I never understood why people took their deer to a processor  . 1/2 the fun of the hunt is taking the meat from the animal and cooking it, imo. I love to experiment with different recipes.

Also LOTS of jerky, and of course there must always be a supply of summer sausage in the basement freezer.. Good stuff. I actually have some defrosting down there right now in the fridge. This is what my cousin and I make:

Steaks, tenderloin, roast, ground, sausage, etc I usually get some of all of it out of a deer. I add nothing to the burger (its better that way.) :tu:

I use the trimmings for sausage, shoulders for jerky & stew, backstraps for steak, hindquaters for ground, hotdogs, stew, roasts. Nothing goes in the ground, but I don't make hamburgers out it either, taco meat & spaghetti.

Steak, backstraps and stew. Once in a while I'll get some made into summer sausage, but usually not. I do my own. I don't mess with garbage cuts. I take the prime stuff and good stew chunks and feed the rest to the critters. I don't do ribs and very little front shoulders. I don't do neck roast anymore, they aren't worth the effort. I don't do jerky or any of that crap that makes venison taste like anything but venison. If I wanted jerky I'd buy some good top sirloin and do it right.
