I've been home brewing for a long time and have read many books on brewing so this statement has me curious since I've never heard about it before. Could you explain this further? How does aging kill yeast and why is that a problem?

I misread dogfish's initial post. I thought he was saying the 120 was a living yeast beer which I would equate with yeast being added to bottle before capping. That's what I would call bottle conditioned from a commercial brewery.

Now in home brewing when you add priming sugar and bottle condition to get your carbonation that's different. Breweries most of the time will bulk carbonate the batch and then bottle. Although some like Bell's carb their beers in the bottle aka Homebrew bottle conditioning.

So in short aging does not kill yeast and warming up a beer from fridge temps then collaring isn't going to make it go bad.

I'm really liking 4 hands brewery! This is the third brew I've tried from them and this farmhouse/saison was right up there with tank 7 for me. The nose and color are great. I plan on continuing to try their brews.

Did some big things at the beer store today. I'm stocked for the next couple of weekends I think.

Shafly Tasmanian pale and Santa Fe happy camper

Green flash palate wrecker and free state cloud hopper

Boulevard chocolate ale. I've been waiting two years to try this. Kansas City folks go nuts over this stuff and I had to see what the hype is all about.

4 hands contact high pale and jolly pumpkin oro de calabaza

2nd shift albino Pygmy puma pale and unicorn killer saison

Omnipollo fatamagorna x2, moebius imperial pale, and en el bosque

4 hands bonafide, morning glory, and late harvest saison

Very excited about this one!!! It's a collaboration between mikkeller and prairie artisan ales. I love mikkellers stuff and hear great things about prairie. I've got high expectations for this beer. I got the last bottle available.

And finally mikkeller George imperial stout and beer hop breakfast black IPA.

Haha, yeah a bit excessive I know. But, they had lots of stuff I wanted to try so it came home with me.

The guy at my beer store was really trying to push this ommegang imperial chocolate stout on me today. It was 15$ a bottle and i just couldn't pull the trigger. I've never even tried any of their beers before. I can't recall seeing many brought up on here. What are your thoughts on ommegang hook?

Very solid. Hennepin is one of my all time favorites. Sometimes I just forget about the old classics that have been around forever.

Been wanting to pull the trigger on Hennepin for awhile. Guess next time I'll pick a bottle up on Hookers recommendation.

Just always go for hoppy beers over saisons but I like to give a good one a try every once in a while.

Really crisp and 'cidery', probably didn't pair too well with the blizzard we had going outside haha but I really liked it.

Is this real life? DF, didn't realize this was a 2010 until right before I opened it. At 18% abv, this beer is starting me off to a very nice Friday. Thanks for sharing this one with me, simply incredible.
