vacuum sealing

    I currently have a food saver vacuum sealer and it works good, the only complaint I have is that when sealing it seems to get too hot and then I have to wait for it to cool but only like a few minutes and sometimes I feel like it could suck more air out of the bag. I am just wondering is it worth the money to buy a professional or commercial sealer to use? What are your recommendations?

    I just take an extra drink of beer between seals to allow it to stay cool.

    I heard a great tip recently, wrap the meat in plastic wrap before putting it in the vacuum bag. It prevents the moisture from being pulled up to the seal which leads to seal failure. Did this with a doe I shot earlier this year and it worked great.

    If you semi-freeze the meat prior to packaging the food savor you will get a much better seal without air pockets. I have found that works well.. the meat also won't lose its shape or lose moisture due to the vacuum pulling it out of the meat. You also won't have problems with misseals this way. Hope that helps.
