First off let me just say I understand it's about business and marketing but I still don't like it. I guess the UFC doesn't want to be percieved as being in support of violence http://themmacorner.com/2012/01/17/guns-and-ammunition-sponsors-banned-from-fox-events/#comments http://www.cagepotato.com/and-now-theyre-banned-all-gun-ammo-knife-and-hunting-sponsors/
From what I've read, it's the corporate policy of Fox to not allow these Sponsors at a national level. IE - they can't buy advertising space across all Fox networks and distribution areas. However, each Fox affiliate can, and does, run these types of ads on a local level. Whether or not to run those ads is up to the local branch to determine their market demographics and decide if they want to allow them. Since UFC fighters wearing gun/ammo Sponsors logos and ads during a fight that's running on the national network, its technically in violation of Fox's policy. A policy which has been in place for decades mind you. While I don't agree with it, I do feel that people are getting all up in arms (pun intended) over something that's not a huge deal.
