We had some turkey legs and thighs left over from after buying multiple turkeys when they go on sale after Thanksgiving. I thawed them out and smoked them. Sprinkled coarse kosher salt and hand ground pepper on them and then sprinkled some sweet hungarian paprika. Smoked them with 3 oz of hickory at 250 degrees for a couple hours, checked the internal temp and it was up to 175, a little too high so I probably could have taken them out after an hour and a half. No worries though, legs and thighs don't really get too dried out if a little over cooked. They smell fantastic! We'll see how they taste after resting a bit and cooling.
