Has anybody tried smoking trout? We got a stand up freezer that my dad and I plan on turning into a smoker. I would like to see if anyone has good smoking recipes?

I haven't smoked trout but I would imagine it would be pretty awesome. But then again I'm a big fan of any smoked fish really, especially salmon. Smoked halibut is really delicious aswell.

I throw most trout back. I love them, but I also like catching them. I keep any that may be injured and won't survive... but that doesn't happen much at all. If I have to kill one and it's small I'll try to catch and keep a partner for a meal. I just salt, pepper, flour with flour or cornmeal and brown in butter and olive oil. I love the taste but don't kill them if I can help it. Last time I kept a trout or steelhead or anything like that was 2 years ago. Now walleyes, they're going in the pan along with bullheads etc.

This year I gave all mine to my buddy at my cousins cabin who was taking them to get smoked. He knows a place that does it for like $2 a trout, so he ended up leaving with like 40 haha. He hasnt tried it but said last year the place smelled amazing when they were doing it. Im betting it turns out good...wish I was there to find out. He lives a bit to far away. But people do smoke them, I guess thats my point here lol

I throw pretty much any fish back that I catch...except stocked trout in most of the places I catch them. Mostly because I know they wont survive. Theres a reason there isnt any native in those waters...mostly because the pickerel/pike. They pick off them 12'' or less trout like candy. And around here they dont hardly ever stock bigger then that. If its like 6 months after the stocking, and I happen to catch one of the very few that made it, I throw it back. I dont eat fish (most anyway) often and not huge on trout. I really only fish them 2 days a year, maybe 3. And thats really just because so is the rest of my family, other wise I wouldnt even fish for them then.

I can't wait for the stripers to start running here in RI. Won't be much longer. That's a blast. :)
