I'm not sure it's a matter of not knowing, rather than a convenience thing. We have 2 daughters with hockey practice every night and usually after 8pm before we get home - no one is willing to wait 30 minutes to peel and boil potatoes - especially since the quality of instant has gotten quite a bit better over the years. Jay you are probably right, I was extremely fortunate to have a flexible schedule and usually had supper ready so the kids ate before they had to go off for activities. I forget about that hectic time in life.
