Well I got two bags marinating/curing. They smelled amazing so hopefully they turn out well. First one… For 5 pounds of meat: • 1 cup soy sauce • 1/2 cup apple cider vinegar • 6 tbs Worcestershire • 2-3 tbs red pepper flake • 2 tbs sesame seed • 3 tbs minced garlic • 2-3 tbs brown sugar • 1/2-1 tsp of da bomb hot sauce • Generous pinch of fresh ground black pepper (4 finger pinch) • 1 tsp curing salt • Usually add half-whole of an oranges juice • Let marinade over night and dehydrate! Here's one we used when we had our deer processing shop opened. This is per pound if I'm not mistaken... it's been several years! 1 1/2 Teaspoon-Salt 1 Teaspoon-Fine Black Pepper 3 Teaspoon- Brown Sugar 3/4 Teaspoon- Onion Powder 1/2 Teaspoon- Garlic Powder 2/3 Cup-Worcestershire (aka washyoursistersauce) 1/3 Cup- Soy Sauce 1 Ounce- Liquid Smoke We always used those little plastic measuring cups with lids on them. Shake the **** out of it and poor into a big mixing bowl. We used those plastic shoebox totes to put the meat in once marinated. Marinate each piece separately and lay it out flat in the plastic tote. Once you get a layer down (long-ways), start layering it the other way (sideways), and keep layering the meat just like that. This just makes it easier to grab a single piece when you go to place it on your trays. You should have extra marinate left in the bowl, Just pour the leftovers in the tote with your marinated meat, cover, and let it sit for 24 hours in the refrigerator. Once you get the meat laid out on the dehydrating trays, sprinkle your coarse pepper or whatever you want on top and get to dehydrating.
