For the summer sausage I just use the high mountain kits then add some garlic, oregano, and pepper.
My jerky is where it's really at but that well be a secret only my kids will get:D

Very cool mike, thanks for the info.

Any tips on making jerky? I've wanted to for awhile and just never have, but venison jerky is one of my favorites.

Bumped into this guy on the way in to my stand this morning. First pictures I have had of him and there is a new scrape about 50 yards from my stand. Five hour sit this morning, nothing seen. Four and a half hours this evening and only had one button buck feed by at about 12 yards. Did see a nice 10 pointer standing by the road on my way to the lease this morning.

We were facing each other fifteen to twenty yards apart. He never spooked, he just walked counter clockwise around to my left and started eating acorns while I eased past him. Too bad it wasn't an hour later while I was in the stand not seeing anything. The tree behind his rack is where I have my climber.

Received some crappy news last evening. It looks like this past weekend was my last hunt on the WI property for the year...maybe ever. At the start of the season the landowner's sons, who are controlling who hunts the property this year, asked me to update them on when I am hunting the property and what we see. I have done so each and every time. Sunday evening I informed them that I removed my gun hunting stands from the property as it was the first time I had access to a trailer to get them since they told me months ago that we no longer had rights to gun hunt their property as they want to keep it to themselves.

So, I received an e-mail last night informing me that they are not going to allow any more hunting this year other than his brother and him. My hunting partner and I still have a tree stand each and 2 trail cameras on the property. I responded last night nicely asking if we could hunt the weekend that we retrieve those items. I am hoping for a "sure", but I have a feeling it is going to be "no, you can drive 5 hours pick up your stuff and get out of here!!" We were just finally getting some nice bucks on camera, too.

It's finally opening day Schuls! Go kill something.

There are other properties that I have access to in IL, but this one is just frustrating 'cause the family (yes they are relatives) keep changing their commitment in allowing us to hunt the property. As of Spring we could gun and bow hunt. Then over the Summer it changed to bow hunting only. Then as the season started (Sept 14th) it changed to bow hunting up until gun season (Nov 23). Now it looks like we are already done. Kinda sucks 'cause this Spring I found a very hidden landscape funnel. It was going to be a pain to get to it and an even larger pain to get a deer out of the area, but I planned on hunting it anyways!

Gonna try to get out hunting locally this evening to get my mind off of the WI property.

Brand new Chevy (2014 2wd 1500 Z71) loaded up and ready to go, got her yesterday. The $6k difference sold me on 2wd lol always have my 4 wheeler. Should be up in the tree in about two hours.

Stick one Schuls. Good luck. Headed back to the woods myself, dead morning, wind shifting, trying to rain and nothing was moving except for one rabbit that kept spazing out and running in circles below my stand.

Nothing yet but the deer weren't appearing on cam until 5. Sure is peaceful listening to the creek though!
