    I don't understand this thread. Don't you let the meat hang for a couple days??

    As long as its cold which it usually is here in Canada during the hunting season. I gut it and hang it in garage at least 3 days. Then skin and butcher. Letting it hang makes meat nicer and gets all the blood out.
