Does anyone know what models of stealth cam have time lapse or do all of them have it?

P series does not. Does time lapse actually video that whole time? I just look at the time stamp to figure out my times.

Timelapse take interval pictures for whatever time you set it for. For example, during deer season, I set my time lapse to take a picture every 30 minutes 24/7. That way if there is anything across the field, I will know. The beauty of the new cameras is that it can be in time lapse, but still take a picture if it is triggered by something up close.
