    Full smoker of sweet n spicy venison jerky in the making right now. Mesquite smoked! Usually do 3-4 hours at 160 degrees.

    Ended up turning out pretty good. I like the well done crunchy tough stuff. Landowner likes the other stuff.

    Anyone have a favorite jerky recipe or smoked venison of some sort?

    looks good. I have the same smoker. I tried using the times and temps that came with the smoker and ruined the whole batch. I do wings once a week at 275 for 2 hours and they are awesome. Kids gobble them up. 2.5-2-1 method for babyback ribs are really good too.

    Me too. I've had mine 6 months. Basically you cook them 6 hours all at 225. First 2.5 hours you put on your dry rub seasoning and add your smoke chips. Second 2 hours you wrap them in foil and add some juice to tendorize them, usually aple juice. No smoke. The last hour you take them out of the foil and add your sauce. Best ribs I ever made. Dont be alarmed by the dark color when you go to wrap them in foil. I stumbled accross this website smokingmeatforums.com and its alot like our this website, full of knowledge and people willing to share. Your smoker is a very popular model. Wings I just add a dry rub and put them in for 275 for 2 hours with smoke the first hour. Sometimes I inject them first the same as deep frying a turkey.
