Smoked Venison Backstrap

    A few times a year I cook up my venison backstaps with this simple method.

    You’ll need:

    Smoker
    Back straps
    Smokey Applewood marinade
    Meat rub of your choice
    Bacon of your choice

    Make sure your straps are trimmed up well. Marinade them overnight in McCormicks Smokey Applewood marinade. When ready, cover with your favorite meat rub. Take your favorite bacon and cover the top ONLY (allowing smoke to penetrate the bottom). The bacon grease will drop down all over the meat and rub almost caramelizing the top.

    Smoke on low for 30 minutes then increase temp to 225 and cook until internal is 140 and bacon is beginning to cook. Pull off and let sit under tinfoil for 15 minutes. Cut and enjoy!
