I'm new to this whole gun-hunting for deer thing. So far I'm not liking it. When I make adjustments sighting it in, do I follow the impact like sighting a bow, or do I make adjustments so I move the knobs in the direction I want the bullet impact. I get the whole 1/4" MOA etc. just not which direction to move the knobs.

Move it to where you want it to go.

There should be arrows on the knobs of ur scope the elevation usually shows up and windage usually shows right. I believe they would be clockwise for both. Follow that for where you want to move point of impact.
