Sausage Balls

    Anyone ever made sausage balls from venison? Any good (hot) recipes out there folks are willing to share? Thanks

    I actually made some last night lol

    I started out with a hot sausage mix/cure ground the meet (Elk in this instance) mix with the cure and water, allow to cure, then package etc.

    Then I added two eggs, some bread crumbs, one finely minced gr pepper, half a Vidalia onion minced and 3 cloves of garlic minced. I set aside some onion, garlic and gr pepper that I cut julienne to use later.

    Next in a fry pan (cast iron) I added some butter and the sliced goodies to sauté while I lightly browned the balls. While browning I mixed up some mushroom cream soup in a 9x13 pyrex dish. Threw in the balls and sauted goodies and popped in the oven @400 for an hour, served over wild rice...... There were no leftovers :)

    Forgot I also used some chopped cilantro in the mix
