Rub recipes

    Best rub I have found for deer,chicken, anything else is a cottage cheese bowl 3/4 full brown sugar,tbsp garlic,tbsp salt,black pepper.spoon out in a smaller bowl add whatever seasoning you want rub meat down,let set for at least 24 hrs or more.cook in smoker,grill or oven

    If that 3/4 of 'a bowl' of sugar it seems like a lot of sugar, which will caramelize and burn.

    In my rubs I'll have equal qty or just a bit less sugar than salt. I may also add corn starch if I want a 'crust' or some other herbs spices depending on the flavor profile, like: onion powder, chili powder, cayenne, paprika, oregano, and or cardamom.

    5 spice powder (not to heavy) is also good for an Asian flavor for fish, but could probably also be used on other meats.

    I picked up a pretty good rub recipe a few years ago that I posted on Hunter's Gear Guide. It basically goes as follows:

    • 1½ tsp kosher salt
    • 1½ tsp crushed up or powdered beef bouillon
    • 3/4 tsp garlic powder
    • 3/4 tsp onion powder
    • 1/2 tsp freshly ground black pepper
    • 1/2 tsp paprika
    • 1/2 tsp dried oregano leaves
    • 1/2 tsp dried thyme leaves
    • 1/4 tsp cornstarch
