Pheasant/Grouse Recipes

    We went on a big pheasant hunt last year, and the DH also went grouse hunting up in NY. We have quite a few in the freezer. I've done them in a roaster pan and some like beer can chicken.

    Any of you have good recipes?

    Hawaiian pheasant/grouse

    Mix 1 can of drained pineapple chunks with 1 TBS brown sugar.
    Fill body cavity of bird with pineapple mixture.
    Wrap Smoked lean bacon around bird, and secure with tooth picks.
    Pepper generously.

    Place birds - (I usually do 4 at a time) in smoker top racks for 3hrs at 250 degrees, or bake in oven in casserole dish at 350 degrees for 1 hr and 15 minutes.

    Be careful when removing from cooker as the meat will fall off the bone.

    Normally I server this with a veggie mix of asparagus sprouts , red onion, orange and red bell peppers cooked in chicken broth and served over brown rice.
