I used to process my own deer, when I was single, now I mostly donate it to the Share the Harvest program or take it to a local guy that distributes the deer to people around town that are not as well off.

I don’t know what I’m going to do when the season is over. I’m so used to talking and posting on this thread....

About an hour to skin, quarter, de bone and separate muscles. Then it depends on what we are making. Very meticulous on trimming. Not an ounce of meat wasted. I'd say on average probably 3 to 4 hours start to finish. Packaging sucks. 2 Hinds left of our 10th this year

Have Fitz make a "Live from the Off Season" thread. It would contain everything preparing for the up-coming season.

We don't do roasts either. Honesty, we've gotten to the point now where the only steaks we really like are backstrap. The previous 5 deer this year we ground everything but the backstraps and tenderloins.

I will probably save the top round out of the buck hindquarters for jerky and I may cut a few steaks out of the doe hindquarters, but we will grind most of it.

Try cutting a hind quarter into one inch cubes. I freeze them as one pound packages. Marinate a package of the one inch cubes (speedies) and a ziploc bag of peppers and onions in italian dressing. Put them in a shaker basket on your grill. Cook.. toss .. turn.. .cook. Put over white rice. Oh my... you're welcome.

Yea we are all familiar with Rancid. He's a legend (not in a good way). Is that little Innovative Outdoorsman cutting that deer up? You just made my day cls.

We should have a mini contest on this thread. Top three bucks taken by bow in December get rewarded. Keep us motivated and hitting it hard when everyone else pretty much stops hunting.

Maybe we pitch in and buy some BHOD hats and shirts as prizes. Low key but fun. I am hunting hard until season closes on January 6th.

I'm taking Friday off and going hunting dammit!
Thursday thru Sunday is our second mini gun season, but I'm taking the bow. Low 30's in the morning, highs in the mid 50's, should be nice.

I'm in! I hunt everyday morning and afternoon (with a bunch of all days mixed in) from October 1 until they tell me I can't be in the woods hunting anymore. I'll be out there until the last sunset of the final day of late bow.

Ok guys I'll get a list of prizes together and we will make it fun.

I don't think I've ever killed a December buck. Got close last year on one and he is the one I'm gonna hunt hard in December. He is still alive.

A really good processing video is the meat eater episode on butchering a deer(Steven Rinella) he shows you how to use the most of the deer and get a variety of meat. It’s on Netflix too season 6 episode 6! Great little 20 minute tutorial
