So... for years I've been using some old stand by marinades for my jerky. Usually either Tonys famous recipe many here know and love, or something like Allegro off the shelf.

However I wanted to get away from the norm and try some new stuff. I tried some Hi Mountain offerings and they were ok ,but then last week I stumbled on this gem. I made a batch and sweet baby Jesus is this stuff good!!!!

It tastes like breakfast sausage, which IMHO is an awesome option for morning snacking. The flavors are very robust with the sage and fennel, with just a hint of sweet maple.... mmmmmm

Just wanted to share for anyone looking for something new. Its also very quick and simple, not many ingredients.

Beware: If your house is filled with jerky lovers there will be fights over this stuff. People are turning against one another at my house, stashing, and hoarding jerky like the end is near. Even USPS is holding a couple pounds hostage as we speak.... friggin USPS...

Tacklebox tx for the jerky recipe, the past few years I have been creating my own recipes for all sausages etc, I also smoke most of my products, I create my own as I am tired of overpaying for a packet of spices, then paying shipping charges, Example, I make my own breakfast sausage, 15 lbs of butt roast at $.99 cents per pound, Spices for 15 lbs, $2.00, Total investment $17.00, bag of spices for breakfast sausage $9.00, Shipping $6.00 Butt roast $15.00 total $30.00 you do the math, Plus you get to create your very own recipe !!

I love trying new jerky recipes. I love all of those ingredients.

This last batch I threw in some ghost pepper hot sauce in some marinade... My goodness was it good. Will be hard to deviate from it since I love hot stuff so much.

You could certainly UP the red pepper in this recipe for a bit more kick. As the recipe stands its just enough for a slight bite... not really any true heat which is good for the kiddos. I wouldn't mind it hotter myself.
