I used up the remaining trimmings to make 30 pounds of Jerky today. For the first time I tried one of the Cabelas mixes. Its more sweet than hot. I like it. Its not too salty like most other pre-mixed seasonings. 30 pounds worth of finished jerky fills about 3/4 of a paper grocery sack. I put it all in the dehydrator at 11:00 am and it was done by 6:00 pm. It will spend a night in a paper grocery bag to normalize and then I'll vacuum seal it.

Same here. Well, mine is more like 1/4 full, but that's not counting the 20 or so sticks of jalapeño/cheese summer sausage that I have left.
Now that is a pile of jerky... I still have 20 or so pounds... Running low. I used to make jerky all the time and take it to work in Ziplocs. One time I bought some beggin strips in as a joke and one of our crewchiefs ate several pieces before I told him what it was... I had even written "dog treats" on the bag but he thought it was a joke... It didn't hurt him any as far as I could tell.
When I bring jerky into the office, it disappears very quickly. I clearly label it VENISON. There are not very many hunters here but they all seem to enjoy jerky.
I usually offer it when I have it or even try to customize it for those who like it hot, mild, etc... This guy would just come in and see some on my desk and grab a whole bag without asking. The funny thing was even after I told him it was beggin strips, he didn't believe me and kept eating it... what a maroon! He never took any more without it being offered after that so maybe he learned something.
I’ve joked that if I brought and opened cans of cat food and set them out people here would eat it. And yes there are those that will take every bit of what is brought and act as if it was brought only for them. Greedy people suck.
I made him his own batch a few days later and took it to him. I don't think he shared with anyone but I felt a little better about what I had done.
Having never used any of the Cabelas pre-mixes I had no idea what to expect. I gambled and won on this one. I dislike overly salty jerky. This was a good choice. I will try other flavors over time. Prior to this I was using the Nessco American harvest spices and liked the flavors but thought it was too salty.
Damn that looks great RC! Mine is all used up also as I lost to freezers due to a breaker in the garage tripping and not catching this for 3 days. Preacher Tony informed me that their is a little gadget I guess I can plug into a outlet that sounds a alarm if I lose power. Live and Learn I guess. T
RC do you use a meat slicer when you make up your large batches or rely on your keen knife skills for uniformity?
This is ground and restructured jerky and not sliced jerky. I use a jerky cannon to extrude the strips into 25 inch length. Once dried, I use a kitchen shears to cut the strips into 5 inch lengths.
