my neck is a cooking! Whitetail neck "stew"

    put whole neck in crock pot.
    mirepoix = celery, carrots, onion (sweet)
    thyme
    dried pepper mix from garden
    cumin
    splash of wife's red wine
    corn, okra, and alot of extra veg from garden
    liquid smoke
    starchy potato
    11 kinds of beans
    wild hog smoked knuckle
    turkey smoked sausage (arrowed fall 2012)
    lotza jalepenos
    little brown sugar
    canned sunsugar tomatoes from garden
    salt
    then let it cook until just vertabrae are left
    remove bones
    add a slurry (cornstarch/liquid) = this thickens it enuff
    bring to boil


    served with fresh jalepeno cheddar bisquits

    it was alot better then havin the neck go in the "grind for burger tub"

    I always keep at least one neck whole, except I bone it out and tie it...then it make a pot roast......
