Just got done making a whole mess of deer cheese steaks and I just about ate the whole thing! I don't feel good now, think I will take a nap.
Yesterday was day 10 of the hanging period. Brought the buck over to a friends butcher shop and the taxidermist skinned him and we cut. I had loin medalions for supper last night. Going to reheat what I left over for a salmon and venison surf and terf.
Whitetail tenderloins two nights ago. Wife made them with a red wine reductions sauce. Fantastic. If they served this in a restaurant it would be my favorite place. Kilboars Hunt Club

I ate heart, sliced nice and thin then fried on a skillet, for breakfast this morning. A little forked horn buck, my first bow kill! It was delicious!!! The rest of him is getting processed. I can't wait for some more!! =
I made some venison chops 4 days ago, rolled in Shorelunch. Both of my kids loved it, and my wife even mentioned how good it was. No venison today, but I did cut off a couple pieces of bear sausage, and gobbled them down!
Made Mostaccioli last week using venison burger in place of beef burger, and I ate that several times this past week for both lunch and dinner. Tonight we are having fried noodle bake using venison burger as well. With the high prices of burger, we choose to grind most of the deer up into burger, and use it that way.
