What you said about fishing in bays wanting drainage is correct. You need drainage. I had a buddy that got swamped in his Native fishing in the Gulf because the Native has no drainage. You need scupper holes to fish in the open saltwater.
Sit-ins are more stable because of lower center of gravity, but if you put a skirt on it, you end up losing a lot of space that is nice while fishing. Here is a picture of my sit-in, the storage space behind me is great, but not quickly accessible so I always end up with a net, and a couple tackle holders inside with me.
I've never used an Ocean Kayak. The seat looks like it sucks. But I'm sure it will get the job done as a beginner kayak. I'll just say that if you do buy one of these cheap kayaks and enjoy fishing from them, in a few years you will be upgrading.

I doubt you could switch out the seats on those padded, molded seats You could add more padding, but its the angle that is uncomfortable IMO, not the padding

Second this. Bought a future beach sit-in kayak two years ago and now I'm already looking to upgrade to something three times the cost. Kayak is another good example of getting what you pay for.

Yes, Easy load and unload and since the storage area has scupper holes keeps my soft bag from getting wet. I don't have rod holders on since I can carry three rods already with the built ins and the front mount rod holder.

You can buy flush mount rod holders also. Most important thing to me was storage, and weight capacity. Seats can be changed or upgraded, lot harder to add carry space.
