just done smoked venison jerky

    fresh out of the smoker, venison jerky----I kept the football,shaped roast out of each hind quarter, I partially froze these, then cut about a 1/4 inch thick, marinated in salt, soy sauce and teriyaki sauce for 1 1/2 days , smoked for 4 hours, o m g great and tender, really tender by using the best cuts instead of left over cuts, almost melts in your mouth, teriyaki marinade was a new addition, will be using it all the time now, thisa added a slight sweetness to the meat
