I been using a LEM jerky gun, finding it makes a more uniform and better product. I ordered a dozen boxes of different seasoning mixes from high mountain seasoning. For the most part they been very good and you can't beat the convenience

Kikkoman soy sauce. Good Seasonings Italian dressing mix. A little brown sugar and crushed red pepper flake to add a little heat if you would like. Put cut strips of venison in the cure overnight. Put in smoker with hickory chips at 225 for roughly 2 hours and pull at your desired dryness.

I keep mine in the fridge but pull out what I'll eat over a few days. I wouldn't say I would keep it out indefinitely but it'll last a good bit. It also freezes good with no problem.

    3# ground deer
    1/2 cup of seasoning
    Mix well
    Load jerky shooter
    Shoot out and fill trays
160* for 4ish hours (time will vary due to type of dehydrator)

Seasoning to use.............. I've been cheating ;) but trust me.

    3# ground venison
    1# ground pork
    1# black pepper
    1/2# black soil
    6 oz Worcestershire sauce
2 oz bottle of doe urine
    1/4 # pine needles
    1# pine nuts
    sage
    1 can coke
    1 can beer
    32 oz bourbon of choice
    5 oz salt
    5 oz cure
    1 apple
    1 pear
    2 large pineapple
    1 coconut
    1 medium bag sunflower seeds
    1 large bag M&M's
1 large bag store bought beef jerky

Drink beer. Place ground venison and pork in the freezer. Place black pepper, cure in the cabinet and Worcestershire sauce in the fridge. Place doe urine bottle in your hunting pack. Slice apple, pear, pineapple and coconut...place in the dehydrator, when dried, in a bag combine dried apple, pear, pineapple and coconut with M&M's, pine nuts and sunflower seeds and salt to taste...place in hunting pack along with can of coke and beef jerky for hunting snacks. Place soil, sage and pine needles in backpack for cover scent...fresh earth scent is awesome! Kick back and take a couple shots of the bourbon, you deserve it.

Come on...you should have realized by the time you got to the 2oz bottle of doe urine this was BS.
