Are you going to boil it?

If so, just leave the lower jaw attached when you boil it. It will come off easily once the meat loosens.

If you don't want to leave it attached before boiling it, cut along the bottom along the inside of the lower mandible, remove the tongue and that meat. Slide knife between the zygomatic arch and the outside of the lower mandible, Then slide knife between inside of lower mandible and deep inside the zygomatic arch. Pull jaw downward. You're going to need to carefully pull and cut, don't force it. Once you expose and free the mandibular joint, it will come off.

..... but it's easier to just boil the whole works and take the jaw off later. :)
