Cube them up, dip in egg and then dredge in seasoned flour. Fry on Medium heat in extra virgin olive oil until flour is golden brown.

Serve with mashed potatoes and greens. ENJOY!

This is a good idea. I know some will soak them in milk for a couple hours but I've never done that.

Butter, light salt & pepper. Still bloody in the middle.

IMO, anything else is a waste of the best cut of meat on earth.

Sauté onions in liberal amounts of butter. Wait till they are 3/4 of the way done. Then toss in your butterflied candy loins on top and add a cup or so of red wine. Serve with mashed potatoes.

    Great minds!

Allow me ....get your skillet smoking hot with butter and Olive oil (olive oil allows a hoter pan without the butter burning)

take the whole loin and coat with salt, pepper and garlic powder...

sear loin on all sides and remove from pan when loin is medium rare .... these are so good they will make you straight! :D

Coarse black pepper, sea salt, and brown sugar equal amounts. I let my meat sit out til for an hour or two. Take seasoning and mix together very well, then coat your steaks. Fry em up on a grated skillet in olive oil, 3 minutes per side. Pat of butter when taking out of the pan, and voila! Occasionally if I have some minced garlic I cover the steaks in that too before frying.
