Hey Hooker here is one that does not involve gravy and is not heavy, and is the best turkey I have had from a crock pot. Spray Crock Pot with Pam or olive oil put a turkey breast in breast side up sprinkle one packet Hidden Valley ranch seasoning and one Wishbone zesty italian seasoning over breast. DO NOT ADD ANY LIQUID! Cook on low for 5-6 hours until turkey is ready to shred. Pull out turkey and pull off all of the meat and remove any bones and fat from the liquid and put the meat back in the liquid and let cook on low another hour. This is great on a bun or over mashed potatoes.
I dont like to freeze chili and I dont like to eat it for a week straight, so a full crock-pot of chili is great for us. Also, for those of us that hunt, it's just safer to use the crockpot while we are in the woods. Now, if I was spending my time soaking in the tub at home while I looked through fabric swatches and paint samples I would probably just use the stove top also. lol By the way, I like to make chicken noodle soup in the crockpot too, good stuff.
We will take a whole chicken and rub the outside with butter or some type of oil, then put various spices on the outside then toss it in the crock pot for a few hours. No water added or anything. It will eventually cook in its own juices. Be prepared for it to fall apart when you try to take it out.
Soups in the crock pot are great. We make a wild rice and pheasant/duck stew that is just great. I'll find the recipe when I get home. There's also a mex dish that we make with deer, rice and beans that is awesome by itself or with some cornbread. Again, I'll find the recipe when I get home. I leave for work around 6-7 am and don't get back home till 6pm. When I have to workout or do something that night, it's much nicer to have something just sitting there ready to eat.
Taco Soup from the crock pot is my favorite. Let is simmer for a few hours then throw in some bell peppers about 30 minutes before you plan on eating it. MMMmmm!

We have started doing a Boston butt at work, or actually the night before. Have lunch for a few days....it is absolutely fantastic! I think I like it better then smoked BBQ right now...
