I'm a firm believer that not only is there a lactic acid build up, but I also believe the body releases adrenaline and that is what give animals that gamey taste. I don't know if there's anything to back up my belief, but I can usually tell the difference in my deer depending on how far they traveled after the shot.
It's 100% the truth though. Everything that is alive has to kill to stay alive. Some people just refuse to believe that. I'm so glad that I was raised to understand where my food comes from and that it's a good thing to take part in the gathering of my own food.
Funny story when my daughter was in first grade and they started writing journals my wife and I go to the first parent teacher conference. At that point in my daughters life her favorite memory was butchering chickens with her dad, and she drew a picture to go with the story. The teacher was a little taken back but it turned out well my daughter accepted a job with Cargil with her Ag Science degree 16 years later.
True. That's why you pour out some slop and while the pigs happily stuffing its face you knock em in the head with a sledge. Never sees it coming. I knew a guy who slaughtered pigs one summer in college. He had to quit after a few weeks becuase he was dreaming all night about pigs screaming and waking up with the sweats.
Oh yeah I have helped at a home butcher shop, if the first round from the 22 isn't right it is awful and tell you what the second and third pig in the chute knows what is coming.
