If the meat is clean and the fridge is in the mid 30s, it will last at least a week, but I prefer under a week for most freshness. It's not as good as dry aging, but it does age somewhat in the fridge if left for a week. This is for whole cuts, not ground meat.
The last deer I shot was when it was hot outside. I quartered it up and put it in the fridge to age since it was to hot outside. It was there for 14 days and then I processed it. Not an ounce of it was bad. I think their time are way short of reality.
I disagree with the freezer chart but, its all according to how you package your cuts. I have always wrapped every cut in clear wrap first making certain to push all the air pockets out. Then wrap in coated butcher's paper. I have had deer roasts two years plus with no ill effects or off taste.
