Big ? Little ? What are you wanting to smoke ?
YouTube has a lot of good ideas.
Old fuel barrel, air compressor.. Lot of good ways or things to use
Don't really have plans to go by, just picture it in your head and start building

If you use an old refrigirator, would you have to remove all of the plastic and insulation from inside of it? I had a friend once that had made one out of a fridge, but that was one of the real old ones, before the age of plastic...lol

I just made a 4' x 4' x 6' high frame out of 2x4's and enclosed it in with plywood and put a door on it. I hang my sausage over dowels and hang it on hooks I made. I just my turkey fryer propane base for heat. Fill a cast iron pan with hickory chips. Works great and cheap. I'm working on a metal stand right now to disperse the heat more evenly. I had to rotate the sausage around after 2 hrs. I just drilled a hole in the door and use a meat therm. to regulate the temp. Used a 6" hole saw to be able to fit the propane hose from the turkey fryer out through the side of it. WORKS GREAT!

3 hrs of heat/smoke with inside temp of smoker at 165-170 degrees. then just 1 hr of heat to get my sausage up to an internal temp of 154.

Only thing is with it being wood, I only do red meat. I don't want my sausage tasting like Fish or cheese. But if you'd put some stainless steel in it to catch the drippings, I'd smoke anything in it.
