The guy sounds like an inconsiderate jerk, does not sound like the type that would respond with respect when confronted and change his ways I would tell him that he is not welcome to come back to hunt.
It sounds to me like he was very deliberate in his actions. He knew what he was doing in a veiled attempt to sabotage your spot in my opinion. That being said, he failed because it shouldn't really mess you up at all. I would give him the boot, or ask when you are going to be hunting on his land. When he says never, end of discussion.

We always drag a deer away from a stand area if it drops in an inconvenient spot. The idea that you have to gut it where it falls is precisely why this fellow is considered an inconsiderate knob by the OP. If he was on his own property, one speculates that he might have done a bit more to protect the future integrity of the stand from a predictable coyote or other scavenger invasion. Whatever incidental evidence folks claim to the contrary, I don't want a gut pile 20 yards from one of my primary stands for a number of reasons. Backing you 100% OP.....
Sounds like bad manners, if he knew that you had a different plan for deer taken on the property, give him the boot. I have left gut piles close to stands after killing deer. But that was in the woods, not a food plot. I would not do it on property where I knew there was a specific location and plan for gutting deer.
