I'm excited. First season actively pursuing them. Doing a morning goose hunt followed by an afternoon dove hunt.

Yep, hoping to find a field to shoot some geese in Saturday. I've got a buddy that wants to sit in a blind and arrow them, but I'm on the fence about whether or not I want to shoot a goose with an arrow.

I'm going to be throwing a bunch of stuff at them this year. Went in on a case with several different people so I have a pick. It'll be a mixture of Remington Hypersonic BBs, Federal Heavyweight 2s and Hevi-Metal 2s. Got some Federal Heavyweight 4s for the ducks as well.

You know.... I'd hunt geese except for one thing. The meat isn't all that great. Heck, I can shoot them off the back porch almost. Now if someone had a sure fire killer recipe.... I might shoot a couple.

Its probably the best jerky meat you will ever find. Only problem is its one the the highest cholesterol meats out there LOL.
Most people over cook the goose hence not tasting very good. Now if I could only get my darn retreiver to bring them back to the blind...LOL
Season opens here on the 1st of Sept, might make it out for a couple of evenings depending on work load.

I have a delicious goose pastrami recipe as well if you're interested. Sliced about an 1/8" to 1/4" thick, it can't be beat.

It's also good ground up as burger.

Well let's see. Jerky??? I'm not a jerky fan. Hamburg????? That's what beef is for... not a goose. So evidently no one has a recipe that calls for just the goose. You got to do something to make it not taste like goose. Now ducks I can do and have a couple meals.... but goose just sort of sucks. I've never had a good wild goose.... so I don't kill them.

I wont be honker hunting, but I will be out knocking down some doves starting this Thursday. Nice, relaxed hunting season to pass the 18 days until deer season opens here.

Actually my favorite way to cook goose is to slice it up, wrap it with a little bacon and toss it on the barbecue. For parties I'll wrap the goose around little cubes of high heat cheese and a little slice or piece of pepper. Depending on my mood I might throw a piece of bacon on those too. Throw them on the grill and they taste fantastic

IMO goose cooked the right way tastes just like sirloin.

I hear doves are delicious. I haven't had the opportunity to hunt them yet, but they're on my list. Unfortunately, doves only open a couple days before early goose and early goose goes all the way till deer season.

    Some day though :)

or mine, everyone raved about the Dawgbites at the GTG. try em with goose!!!!!! wrapped in bacon cant be beat. plus there usually isnt a ton shot (reg seaon bag limit is 2) so its just a nice app/snack before the main course. ORRRRRRRRRRRRRRRRRRR go to your local meat processor and see if he/she'll make you some breakfast sausage outta it. i usually save up a bunch first then mid season head over. if you need the recipe PM me or call the Grainery in Antioch, IL. ask for Jay.
