First I would plant ASAP. The planting for a fall crop where I am is early August. For how big you want to go is how much work you want to put in to it. I would recommend a smaller one so you can get it going quicker. As for what to plant clover is popular turnips, winter rye, depends on where you are but I would say anything with a quick germination. I used clover and secret spot and had germination in a couple days with good rain...

I like to use turnips, rape, clover and also chicory. Another important thing to do is check the ph, lime accordingly fertilize. I recommend using pelletized lime and fertilizer as you seed.

The timing is tuff. It needs to be in the ground ASAP. As for size of plot and where depends on the location. Focus on corners if you can. Will you be using a tractor?? As for seed I would stick with winter wheat, brassicas, winter peas, and top it off with clover. The clover might not sprout this year but it will the first of spring. As for rye grass deer have a hard time digesting it. It also messing up their rumen. They will eat it but it's really non beneficial. The protein in it is minimal at best.
