I was in the Air Force stationed in Guam and we had wild hogs everywhere. They were a blast to bowhunt and are excellent eating. The way I cooked them: Quarter them and wrap the parts loosely in aluminum with Italian Dressing. Leave a 2-3 inch hole in the top of the aluminum to let in some of the smoke flavor and wet cook on the smoker until falling apart tender. Unbelievably fine eating. I cooked hogs this way up to around 200 pounds and would cater for the various squadrons on the base who wanted a pig for their beach parties. My smoker was a converted 55 gallon drum and I could cook 2-3 pigs at a time. Congratulations on the hunt... looks and sounds like you had a blast.
I love me some hogs!! You should have killed every dang one of them. They are destructive here in Texas, but it gives us the opportunity to hunt year round.
I know they cause problems, BUT that must be awesome to have them around year round! I guess they are infiltrating New York somewhere, as they have opened a year round season on them, but they are not my way yet... I had a lot of breakfast sausage made up and the chops were awesome. The second time I saw my wife (before she was my wife obviously) my mother made a huge feast of my boar chops for her and her family. They all loved the meat and I was pretty proud that it was my kill we were all eating! Great memories!!
Afflicted We stayed at the High Horse Ranch. I think they called themselves Head Hunter Outfitters. Great bunch of guys...I don't think they advertise like other outfitters. Just word of mouth.
