So I had some wild hog ham and two deer to process. I bought a grinder and a sausage making kit that would make 25 pounds of sausage. My son and I got up early Saturday and went to work. We ended up making 30 pounds with the kit which we bought at Academy and the sausage, similar to Bratts turned out great. I look forward to trying different recipes in the future but it was a great way to spend a day with my son. The only thing I may do different is not make so much of the same flavor next time and not grind it quite so fine. Ours ended up tasting just like summer sausage though a touch saltier from the cure. We slow cooked some on the grill for about an hour while we were finishing up the rest of the deer processing. Perfect weather... we had a great day together!
That's awesome MuzzyMan. Sounds like a great Saturday well spent. I haven't processed one of my own yet but I did go get a grinder and supplies to do so after taking my doe in Sept and finding out the prices to process a deer here in RI. I cant wait to process my own and make my own sausages, etc... Just didn't have any more deer cooperate throughout the rest of the season. With the price of processing here i will more than pay for my grinder with the next 3 deer I get. Lol.
Zackly... I had 50.00 Bday dollars and the grinder was 30% off. To have 30 lbs of sausage made and 2 deer processed into burger would have easily topped the total spent, including the spice mix and casings. Plus, I can make sure I don't grind tallow and tendon into the mix like most processors do.
