Here is some good southern cooking. marinate cubed meat overnite in buttermilk get cast iron skillet hot with some veg oil pat meat dr and drag through Flour drop in pan to fry until done drain grease from pan after frying meat be careful to leave all the driblets in bottom of pan with about 2 tblspns of grease cut up half of a small onion and saute in pan add flour until grease is saoked up then add water to get to gravy consistency (gravy should be light brown) salt and pepper to taste then add meat back into gravy and let simmer for 2-3 minutes serve meat over rice and gravy with any other side you would like
