Deer ribs

    I put a rub on them , wrapped them up nice and tight in foil and have them in a 200 degree oven
    I two big racks of rib ,a neck roast out in the deer freezer. Unfortunately they managed to get ' stuck ' out there . The temps rose to 40 and I was able to get them out to defrost in the house. I didn't feel like sawing the ribs in half so split cage and put them in whole. I have the crock pot ready for neck but it's still too frozen.

    Oh my! Not a lot of meat but great taste and fun to eat.
    Neck roast finally in crock pot until tomorrow morning onion,garlic ,steak seasoning, and Italian seasoning.

    Oh so good! Plus 3 quarts of broth.
    This is just one neck spine removed before cooking.
    Picture french bread (My egg white for me), Split, lathered in a home made butter mayo,melted cheese,roasted red peppers Man! Or your favorite BBQ sauce

    Ribs don’t get enough love. Turning it into ground is a waste I think. Slow roast like how you did or making soup/stock is way better.

    My protein bread made the other day, the butter mayo, touch of horseradish ( just had to it's so good) thin sliced coby jack all melted and crisped in air fryer

    Looks excellent, the last couple years I been saving the ribs. I slow cook them for 6-8 hrs in beef broth and some seasoning, then finish on the grill with BBQ sauce. There very good!

    There are several you tube videos on how to make this. Some better than other . My two go are Lovingitonketo with Wendy and Indigo Nelli.
    It's an acquired taste due to being a tad dry . That said GREAT with a spread of some kind. It has the feel of bread This has zero flour. It is whipped dried egg whites with a bloomed yeast, tartar, allulose,xyanthum gum. Then at the end you add powder egg yolk( secret ingredient that makes it like bread) butter and butter milk or butter and beef keto chow. Then quickly take this " meringue" and shape what ever:
    Rolls, breads,bagels, pizza crust etc,etc.
    The videos teach how to make sweet rolls and breads with this base.
    I've made garlic toast, used it in French onion soup, and it toast up like regular white bread. I haven't tried the sweet stuff people make, though dang if it doesn't look good. I still miss sandwiches and this fills the bill and is high protien very low carbs. I bloom the yeast with either honey,the yeast eats or inulin.

    I gotta find a way to cook deer ribs myself. It’s something we usually don’t do much with.

    Saving the necks for roast from now on.

    I’ve always kicked myself for not utilizing ribs often due to lack of knowledge, I’ll give them another shot after seeing some of these posts!
