    I just left snap fitness I have no energy. Sitting around with a big mac watching our big wisconsin women trying to lose weight can wear a guy out ya know.

    That was a great thread thank you. Pretty much exactly what I do. Except the front shoulder.... I pretty much just keep hacking away in a random order to get all the meat off possible. Never got the bone clean out of there like that. Also I didn't know you could cut the knee off with just a knife. Have always used a saw. Good looking process.... cool stuff.... sticky worthy for sure.

    The only things I would comment on is some nomenclature of cuts.

    Great job RC. I do it virtually the same way except I cut the pelvis out while hanging, twist off the head instead of using a saw (a little extra knife work is sometimes needed) and throw away the rib cage with meat in tact because of all the tallow. By using the plastic wrap I have found the meat is still in great shape after two years in the deep freezer and it wasn’t to bad (better than what I have got back from a processor) when I found a package just under three years old buried in the back of the freezer.

    great thread! i generally use the shoulders/legs to peel off the hid in the other direction. just easier for me, this is textbook man. i love it!
