    Smells kind of crazy, but smells good! If I get a cold in the future I am going to squirt some of the mix up into my nostrils! Holy moly that stuff made my sinuses run!

    An oven with an open door also works and I am thinking a gas grill would likewise work... anyone tried that? Thanks for the recipe PT... that sounds delicious.

    Anyone tried slicing flank meat for jerky? I am thinking that would probably be serious "Jerk"y.

    Nope, can't say I have, but I'll be looking into it. We usually get ours in strips.

    I have 5 pounds thawing since last night to marinate. I was going to try the preacher's recipe and forgot a couple ingredients. I'm glad someone commented on this so that I can try it. I had forgot where I got that recipe before.

    I bought a nesco food dehydrator that has fan on top of unit and it has far outperformed the old dehydrator we had with a heat source on bottom with no fan. It is much quicker and you don't have to rotate trays. FYI, for person who asked about dehydrator awhile back. This one cost $60-70.

    I just started marinating my first batch of like 10-12 pounds or so.

    After drying it, let it completely cool in the open air ... then you can put it in Ziploc bags ... it will go through a bit of a metamorphosis ... from dry to kinda shiny looking ... it eats best the next day...

    I will definitely try that recipe for Tony's.

    I had my buck fully ground up. I used it to experiment with jerky, roughly 120 pounds (some other was used in my hardcore hamburger helper)...

    Anyways, I tried a ton of different spices and combinations... my favorite so far was to use the nesco brand "hot n spicy" and then finely ground a handful of fresh habaneros, mix it all in 2 pounds of ground, toss on the dehydrator and there you have it, tastes great and will melt your face.

    Darn, my oven will not bake any lower than 170...weird. I guess I could slightly crack the oven door to reduce the temp?

    Tony, I had some left over meat that had marinated in your sauce. I don't have time to make it into jerky so I put some yellow corn meal on it and fried it up in some vegetable oil....WOW! My kids are running up to me and demanding more every other minute! It is a hit in my house...thanks buddy.

    Actually, that isn't weird .. most dont ... you really need to get yourself a dehydrator, my Brother!!!


    1/8 inch is my favorite ... but I would say 1/8 - 1/4

    Just made some jerky using the Tony's recipe. It was good. I used half the hot sauce in main recipe because of others eating it. Going to make another batch Sunday the spicy way. Thanks for the recipe.

    To make a mild version, Don't leave the hot sauce out ... leave out the red pepper
