I thought CWD primarily attacked the nervous system...granted, I've heard the prions can be schluffed off from just about any part of the animal.

EHD/BT could be a different story in term of organ meats from animals on the way out...

I slice it into about 3/8ths inch thick "medalions" Then take some oily italian dressing and put it in a pan.... Fry it brown on both sides and eat it about medium.
Truly, the best part of the deer IMO.

Seems like not only is it good but a bunch of you dudes are saying its the best part!! Thats crazy, I've never tried it. If I did cook one though I would hold it in the palm of my hand and say "KALIMAH......KAALLLIIIMAAHH!" until it burst into flames. :D

I tried one for the first time last year and loved it. sliced it in 3\4 inch slices, soaked it in garlic butter and pepper for 30 mins and cooked it on the grill. mmmmmm. gonna keep every one from now on as long as I don't destroy it with my bow.

We like to soak the heart in salt water, the liver in milk overnight. I'm not a big fan of liver but I like to cut the heart into super thin slivers and do the same with a large red onion so that onion and heart have the same consistancy. I then pan fry it on a preheated cast iron pan and bacon grease not very long....salt, pepper, side of rice forgetaboutit...super good.
