I tried my first heart today, texture was good, but I wasn’t too impressed with the flavor on its own. I’m not a fan of the way organ meat tastes though. It tasted pretty great in a sandwich with cheese, ranch dressing and onion. :) I won’t be leaving them in the woods anymore, Next time I’ll prepare it like you did bbslayer, See if that makes a difference.

Would this classify as organ meat? Never really thought of it I guess.

I love heart fajitas. It is a muscle just like backstraps, rump roast or any other muscle we all eat and it boggles my mind people don't use it.

This time I soaked mine in 4 parts water, 1 parts apple cider vinegar with some garlic and onion powder (also S&P) for 36 hours). Cut/cleaned it and pan fried it in some EVO (not breaded...gonna do that next time though).

Heart is one of my favorite things to eat!!!

I’ve had deer heart a couple of times growing up and it was pretty good. I have been giving them to a guy at work last few deer I took. My son wanted to try the heart from the buck he shot this year. I cleaned it, sliced it and cooked in a cast iron skillet with onion, garlic, butter, and mushrooms. It was very good. We saved the liver from his deer as well to try. His hunter safety instructor said it was good. Not so sure though. Sure the dog will like it.

We clean and boil in a pickling spice then chunk and put in a jar of spice pickle juice left over from dill spears.
Also do the same with whole hard boiled eggs, good way to reuse pickle juice.

Heart and liver are some of the best parts of the deer.
