I saved the deer heart from my buck. Never ate it before but everyone gives me crap for not, so I figured I would give it a go this time. So, how do you make yours? Any tips for me?

My co-worker eats heart. She pan fries it and servers it with brown or wild rice.

We just cut it into slices and cook it like you do your steaks

Isn't there an old ritual dish with heart, liver and kidneys?
I know the owner of the shop I frequent does something with all of it.

Just got finished. Wasnt bad. I wasnt crazy over it though. My mom has been begging me to give them to her for the dogs, very healthy for them I guess, so I think all future ones will go to her. But I am glad I tried it!

Heart is awesome. You probably over cooked it. Panfried in butter and onions to medium rare. Any more than that and it gets tough and loses flavor.

Agreed! Heart should be tender and juicy and almost melt in your mouth. We cut ours into strips and dredge in egg and flower then pan fry. Gravy is made from the drippings and served alongside mashed taters. It's an awesome meal.

Heart is not my favorite. I usually slice mine into small cubes and freeze in (4) zip lock baggies. I live on a lake and like to use them for catfish bait. They work very well.

I either bread and pan fry or I'll brine it over night, boil it till cooked, then slice thin for sandwiches.

Slice heart and let it soak for a few hours in a cold water in the fridge, changing water as the blood diffuses in the water. Cut into slices and cut out the heart valves, cartilage. Pan fry with butter, onions and salt/pepper, but don't over-cook.
