To be perfectly honest.. I ship about 25 pounds of meat that I just cut into grinder chunks to Swiss Meat Company in Swiss Missouri every year and have them make venison bologna. They do an excellent job. However, I helped a friend make some last year and we pulled a recipe off Allrecipes.com, link at bottom. We did 20% pork fat added to venison. We skipped the liquid smoke and packed it in a large natural casing, hung it overnight and slow smoked it the next day.
